Sweet Potato Breakfast Boats

Healthy, Easy & Satisfying!

We brazilians, don’t really eat sweet potatoes for breakfast or as a sweet dish in general, but I’ve learned this recipe overseas and I was surprised of how good it tasted. I would love to share it with you!


1 whole sweet potato
1 tsp cinnamon
¼ tsp ginger, powdered
1 tbsp natural almond butter
½ cup strawberries
1 cup Natural Greek yogurt
(low-sugar) Granola – Just enough to sprinkle on top


How to make it:

Cut the sweet potato lengthwise in half and place (inside down) in a preheated oven on 220 °C / 430 °F for about 20-25 minutes.
Scoop out about three-quarters of the flesh and mix it with cinnamon and ginger and 1 tsp of honey if you like, then spoon back into the sweet potato halves. Top with nut butter, strawberries, yogurt, and granola.
